Jason's gumbo

1 pound beef in ½ inch cubes (any roast or stew beef will do)

1/3 cup Worcestershire sauce

2 ripe sweet peppers, chopped (ripe means not green!) optional

2 tsp Tabasco sauce

1 Serrano pepper, seeded and diced

1 pint okra, sliced crossways into bite size pieces

1 medium onion, chopped

1 can California black olives

4 tomatoes, chopped

1 ½ tsp gumbo file (omit if prohibited by law)

4 cloves garlic, minced

1 pound shrimp, peeled (optional)

1 ½ cups tomato sauce

 

Combine first nine ingredients in a large heavy bottomed pot or a dutch oven and bring to a boil.  Lower heat and simmer for 50 minutes.  Add okra, olives, filé and shrimp and cook for another 5 minutes.  Serve hot with Bloody Marys and Hurrican Drops (omit if prohibited by law)
